Filé powder doesn't keep it's flavour once it is ground. I knew this but still took a chance on Zatarain's 35 gram container. Being a true Creole and Cajun company I thought I could trust them to meet a certain standard. I was wrong.

This Zaterain's filé powder is a waste of money if you are expecting a true fresh filé flavor to your gumbo I was expecting a slight loss of flavor but I'm just going to throw this bottle away. It made a large pot of gumbo a large pot of the worst gumbo I've ever made.

Perhaps a better solution would be to sell Filé powder in much smaller containers so there is none left to sit and go stale. 35Grams seems like a small amount but when you only need a couple tablespoons per recipe having to buy approximately three quarters of a cup is not helpful. Maybe Zatarain's could sell it in guaranteed freshly ground in vacuum packed pouches of 2 or 3 Tablespoon sizes?

I know excessive packaging is a concern but in this case I think an exception can be made.
